Perfect Breakfast Scones: Chocolate Chip Scones

This British slight sweet pastry is a staple around tea time. It has been adapted in North America as a specialty dessert. Today we offer for a variation on the classic scone to be served for breakfast. You can sit around the table with your family and engage in a heated debate as to the correct pronunciation of Scone.

Serving: 6 portions

Ingredients:

 

For the pastry:

2 cups of all-purpose flour

3 tablespoons of sugar

2 teaspoons of baking powder

1/4 teaspoon of salt

1/2 cup of buttermilk

2 eggs beaten

1/2 teaspoon vanilla

1/2 cup semi sweet chocolate chip

4 table spoon chilled butter cut into small cubes coarse sugar for sprinkling before baking

 

For the glaze:

1/2 cup of powder sugar

1/2 teaspoon vanilla

1-2 tablespoons of milk (for desired consistency)

 

Instructions:

 

In a mixing bowl, whisk together the flour, sugar, baking powder and salt. Using your hands work the butter into the dry flour mixture until crumbly.

Whisk together buttermilk, eggs and vanilla. Set aside one tablespoon and add the rest into the dry mixture.

Using a wooden spoon mix to form a soft dough. Fold in chocolate chips.

Transfer the dough to a slightly floured surface and knead for a minute. Using fingers pat dough gently into a round 1/2 inch circle.

Cut into 6 large scone wedges. Brush scones with remains wet ingredients mixture and sprinkle with coarse sugar.

Bake in a 400 degree oven for about 18-20mins or until golden brown.

 

For glaze, mix powdered sugar, vanilla and milk until smooth and drizzle over scones using a spoon. Serve warm. Enjoy
